Summer Cupcakes

Summer Cupcakes are a great way to add a tasty and vibrant dessert for any summer fun occasion. This is the perfect tropical/pool-themed cupcake. I love using it for pool parties as well as a simple and sweet treat when I'm craving something delicious.

Ingredients

  • 1 box cake mix we used white but you could use pineapple upside cake for a more summer cupcake!
  • 2 Eggs
  • Cup Water
  • Cup Vegetable Oil
  • Icing Funfetti Aqua Blue
  • Sprinkles Wilton Flamingo
  • Sprinkles Wilton Pineapple

Instructions

  1. Mix cake mix, water, vegetable oil and eggs according to the cake mix box.
  2. Spray cupcake pan with cooking spray if you choose not to use cupcake liners. Otherwise, put down cupcake liners first.
  3. Pour cupcake mix into a measuring cup for easy pouring. Pour the cupcake mix into the cupcake pan, making sure not to fill all the way to the top.
  4. Bake for 15 minutes at 350 degrees.
  5. Let cupcakes cool.
  6. While the cupcakes are cooling, cut your green twizzlers in half for the pineapple's stem.
  7. Transfer your aqua blue icing to a ziploc bag or a Wilton icing bag. I used a Wilton Tip 1M to pipe on the frosting on top of the cupcake.
  8. Frost each cupcake with the icing. On the top of the cupcake, sprinkle the flamingo and pineapple sprinkles on top of the cupcake.
  9. Enjoy!
