While many people don’t think that cauliflower mashed potatoes can taste as good, that is where you are wrong. These keto cauliflower mashed potatoes are low carb and so good, you’ll want to make them all the time.

It can. The key to making cauliflower mash taste like potatoes is to make sure to add dairy. You want to add a full-fat dairy whenever possible. Heavy cream is a great choice for this. Another way to boost the creaminess of these “potatoes” is to add cream cheese to the mixture.

When you steam cauliflower, it is easy to mash to the consistency of mashed potatoes. It is a great substitute for potatoes, which are not keto friendly or paleo. Even when following Weight Watchers, eating vegetables is fewer points, often 0 points.

  • Nonfat Milk: When making this dish, if you want it to be Weight Watchers Friendly use nonfat milk
  • Add cream cheese: Adding cream cheese to these cauliflower mash”potatoes” gives it a richer taste. This is great if you are on keto.

Prep time: 10 minutes
Cook time: 15 minutes
Serves: 4

Tip: Steaming the garlic along with the cauliflower will remove the raw edge and make it more tender.

How to Make Mashed Cauliflower with Garlic and Chive

Ingredients:

1 medium cauliflower head, florets only
2-3 whole garlic cloves, peeled
2 T. extra virgin olive oil
2 T. heavy cream or regular milk Almond milk also works.
1 t. garlic powder
1 t. onion powder
Sea salt and black pepper, to taste
3 T. fresh chives, chopped

How to Make

Place the cauliflower florets and the garlic cloves into a steamer basket set over a pot of gently boiling water. Cover and steam until the cauliflower is fork-tender, around 15 minutes.

Transfer the cauliflower and garlic to a food processor or blender and add the olive oil, milk, garlic powder, and onion powder. Season with salt and black pepper, to taste, and process until smooth and creamy. Taste and adjust the seasonings, as desired.

Transfer to a serving bowl and top with fresh chives before serving. Enjoy!
