Pecan Pie Cupcakes

Ingredients

Cupcakes Ingredients

  • 1 box spice cake mix
  • 3 large eggs
  • ½ C unsalted sweet cream butter softened
  • 1 C whole milk

Pecan Pie topping ingredients:

  • ¼ C sugar
  • ¼ C brown sugar
  • 2 tablespoon cornstarch
  • ¾ C light corn syrup
  • 4 tablespoon unsalted sweet cream butter melted
  • ½ teaspoon kosher salt
  • 2 large eggs lightly beaten
  • 1 ½ C pecans chopped
  • 1 teaspoon pure vanilla extract

Cinnamon Frosting ingredients:

  • 1 C unsalted sweet cream butter softened
  • 2 ½ C powder sugar
  • 1 teaspoon vanilla
  • 1 tablespoon ground cinnamon
  • 3-5 tablespoon heavy whipping cream

Maple Leaf Cinnamon Sugar Pie crust Ingredients

  • 1 premade pie crust unrolled
  • ¼ C unsalted sweet cream butter melted
  • ½ C sugar
  • 3 tablespoon ground cinnamon

Instructions

Cupcake Directions:

  1. Preheat oven to 350 degrees
  2. Using a standing mixer, combine the cake mix, eggs,
  3. milk and butter and mix until combined
  4. Scoop cupcake batter into the liners, filling ¾ way full
  5. Bake in the oven for 21 minutes.
  6. While the cupcakes are baking, make the pecan pie filling

Pecan Pie Filling Directions:

  1. Using a medium saucepan stir together all filling ingredients EXCEPT pecans and vanilla.
  2. Bring to a boil.
  3. Remove from heat and stir in pecans and vanilla. Pour into a bowl. Let mixture cool on the counter for 10 minutes and then refrigerate for 1 hour
  4. Scoop out the center of each cupcake and fill with the filling

Cinnamon Frosting Directions:

  1. Using a stand mixer, combine all ingredients and mix on medium speed.
  2. Mix until you see stiffed peaks in your frosting and scoop into piping bag

Cinnamon Sugar Pie Crust Directions

  1. Preheat oven to 350
  2. Mix the cinnamon and sugar together
  3. Unroll the pie crust and place it onto the cookie sheet
  4. Brush the melted butter onto the top of the pie crust
  5. Sprinkle the cinnamon sugar mixture onto the pie crust
  6. Using the cookie cutter, cut out leafs
  7. Place into the oven for about 10-12 minutes or until lightly golden brown
  8. Allow to cool to room temperature

Decorating Directions:

  1. Using the piping bag, pipe frosting onto the cupcake
  2. Sprinkle some chopped pecans on top and place a maple leaf on top
  3. Enjoy!
