Instant Pot Caramelized Banana Walnut French Toast


  • 1 loaf of french bread cut into 3/4 inch cubes
  • 4 bananas sliced
  • 2 tbsp. brown sugar
  • 1/4 cup cream cheese
  • 3 eggs room temp
  • 1/4 cup whole milk
  • 2 tsp. sugar
  • 1 tsp. vanilla extract
  • 2 tsp. maple extract
  • 2 tsp. cinnamon
  • 2 tbsp. cold butter sliced
  • 1/4 cup walnuts chopped


  1. Slice bananas, set aside.
  2. Slice french bread into cubes, place in a large bowl, set aside.
  3. Spray a small round baking dish with non-stick baking spray. Begin to layer the bread, filling it only 1/4 of the way full. Add sliced bananas over the bread. Top your bananas with a portion of the brown sugar, maple extract, and sugar.
  4. In a mixing bowl or a bowl of a stand mixer, beat the cream cheese on medium for 1 minute until it’s creamy enough to spread. Cover the bananas and bread with the cream cheese.
  5. Repeat bread and bananas layers.
  6. Slice butter and place it on top.
  7. In a mixing bowl or a stand mixing bowl , add eggs, milk, sugar, cinnamon, and vanilla, mix to combine. Pour your egg mixture over the bread.
  8. Prepare your Instant Pot by adding a 1/2 cup of water. Add your trivet to your Instant Pot. Place your baking dish in your pot on top of the trivet. Set the High Pressure to high for timer for 25 minutes. When timer goes off, turn the steam release valve to “venting”. Let sit for 10 minutes to allow the french toast to settle and become firm.
  9. Remove from Instant Pot.
  10. Place a large plate over the baking dish and carefully flip it over. Lift the baking dish away from the french toast. Rest for another 5 minutes.
  11. In a small saute' pan, cook sliced bananas, walnuts and maple syrup over medium heat. Stir often and make sure not to burn. Top the french toast with the saute' bananas, walnuts and maple syrup.
  12. Serve immediately.
