How to Make Zucchini Bread. Making Zucchini Bread is a great way to use up the abundance of summer squash in your garden. This bread is one of my favorites. It is a simple recipe that is sure to please everyone you serve it to. Have it for breakfast, brunch as a dessert.

  • 2 cups shredded zucchini
  • 3 eggs
  • 1 cup oil
  • 1 tablespoon vanilla
  • 2 cups sugar
  • 3 tsp cinnamon
  • 3 cups all purpose flour If you want to make it a bit more healthy use whole wheat flour.
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ cup raisins optional. I personally do not use it in mine.
  • ½ cup nuts optional. I personally do not use it in mine.


  1. Preheat oven to 325 degrees. Grease 2 loaf pans like these.
  2. Sift flour, salt, baking powder, baking soda, and cinnamon in a bowl.
  3. Beat eggs, vanilla, oil, and sugar together in a bowl.
  4. Add in the flour mixture, slowly.
  5. Once the ingredients are well mixed, stir in the zucchini and raisins/nuts if you are using them.
  6. Pour into the 2 pans. Bake at 325 for 40 minutes. They are done when the knife comes out clean.
  7. Cool for about a half hour, then remove from pans.
