Pumpkin Bar Recipe with Streusel Topping

For the streusel crust layer

  • 3 C flour
  • 3 C light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp kosher salt
  • 1 ½ C unsalted butter softened

Pumpkin Filling

  • 2 – 8 oz packages cream cheese softened
  • 1 C Sugar
  • 1 C Pumpkin Puree
  • 2 TBSP flour
  • 2 tsp pumpkin pie spice
  • 2 tbsp whole milk
  • 2 large eggs


  1. Line a 9x13 baking dish with parchment paper and preheat oven to 350 degrees
  2. Using a large bowl, whisk together the flour, brown sugar, oats, ground cinnamon and salt
  3. Cut the butter into cubes
  4. Using your fingers, work the butter into the dry mixture to create a sand like crumble
  5. Press half of the crumble mixture into the bottom of the pan
  6. Set aside other half
  7. Using a large bowl, beat together the cream cheese and sugar until smooth
  8. Beat in the pumpkin, pumpkin pie spice and flour until combined
  9. Beat in the eggs, one at a time until combined
  10. Beat in the milk until combined
  11. Pour batter over crust and sprinkle remaining crumble mixture
  12. Bake in the oven for 35-45 minutes or until the center is set
  13. Allow to cool completely
