Easter Bunny Cupcakes

Ingredients

  • :2 C sugar
  • 1 ¾ C flour
  • ¾ C cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs room temp
  • 1 C whole milk room temp
  • ½ C canola
  • 2 teaspoon vanilla
  • 1 C boiling water

Frosting ingredients

  • 1 C unsalted butter softened
  • 3 C + ½ C powder sugar
  • 2 teaspoon vanilla
  • 3-5 tablespoon heavy whipping cream
  • gummy bunny ears
  • edible eye
  • pink gel frosting
  • black gel frosting

Instructions

Cupcake Directions

  1. Preheat oven to 350 degrees.
  2. Line cupcake tins with paper liners.
  3. Whisk the sugar, flour, cocoa, baking powder, baking soda and salt in a mixing bowl.
  4. Combine the eggs, milk, oil, and vanilla in a bowl.
  5. Add this to the dry ingredients beating on medium until the batter is smooth.
  6. Gradually add the boiling water, milk, and oil and blend together until the batter is smooth.
  7. Using a medium scoop fill the paper lined cupcake tins with the prepared batter.
  8. Bake at 350 degrees for 20-25 minutes until an inserted toothpick comes out clean.
  9. Allow to slightly cool before transferring to wire racks.

Frosting directions

  1. Beat powder sugar, butter, and vanilla in a bowl.
  2. Add in the heavy whipping cream and continue to mix until stiff peaks form
  3. Scoop the frosting into a pastry bag with a large round tip.
  4. Twist the open end of the pastry bag to push the frosting to the tip.
  5. Starting around the edge pipe a circle and pipe it into the center creating a peak.
  6. Set aside

  9. Using the pink frosting, add a nose
  10. Using the black frosting add the mouth and whiskers
