    Step 1. Brown the chicken in a skillet and season with salt and pepper. Add all the ingredients to the slow cooker.

    Hint: When cooking the chicken, you are just browning it to get that nice sear on the outside. It will finish cooking while in the crockpot.

    No! If you want to cut your chicken into strips or large chunks or even shred it your can. If you want to shred it, cook the chicken whole in the crockpot and shred it when fully cooked with two forks.

    • 2 teaspoon olive oil
    • 1 lb chicken breast boneless skinless, cubed
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 1 onion diced
    • 1 green pepper diced
    • 1 jalapeno seeded and diced
    • 2 cloves garlic minced
    • 1 tablespoon chili powder
    • 2 teaspoon ground cumin
    • 2 cans chicken broth
    • 1 can tomatoes diced
    • 1 cup corn frozen
    • 1 cup brown rice
    • 1 tablespoon lime juice
    Instructions
    1. In a skillet, heat olive oil to medium-high heat and brown chicken breast, season with salt and pepper. Add chicken, onion, green pepper, jalapeno, garlic, chili powder, cumin, chicken broth, tomatoes, corn, rice, and lime juice into a 6qt slow cooker.
    2. Cover and cook on high for 4 hours. Spoon into bowls and garnish with avocado, cilantro, sour cream, or tortilla chips.
