Wash and wrap in foil before placing into a hot oven for 1 hour the night before. You can place the roasted beets into an airtight container in the fridge until you are ready to use them.

In this smoothie, the best fruit to have with beets is strawberries and bananas. Although, beets are only mildly flavored which makes them fit well with almost any fruit you have. If you find yourself wanting to cover up the taste of the beets, the raspberries in this recipe do a fantastic job of hiding the beet flavor.

In a freezer-safe bag, measure out all the ingredients and add to the bag except for the liquid. When you are ready to make your beet smoothie, allow the bag of ingredients to defrost for 30 minutes at room temperature. Popping in the microwave for a few seconds will help speed up the wait time if you are rushing. Pour into the blender with the liquid and combine until smooth.

Although I prefer a fresh smoothie to enjoy, you can store this berries smoothie for later use if need be. You can place the blended smoothie into a sealed container or cover it with a lid. One of my favorite things to do with smoothie leftovers is to make popsicles! You can place the prepared smoothie into popsicle molds. Place the mold into the freezer for a few hours to freeze or overnight for best results!

Ingredients

  • 2 large bananas cut into chunks and frozen
  • 1 cup strawberries frozen
  • 1 cup raspberries frozen
  • 2 large red beets roasted, peeled and chopped
  • 2 cup almond milk unsweetened
  • 6-8 large ice cubes
  • 1 T. chia seeds
  • Optional: 4 sprigs of fresh mint for garnish

Instructions

  1. In a high-speed blender, put the bananas, berries, beets, almond milk, and ice cubes. Set the blender to the highest setting and combine until fully incorporated, smooth, and creamy. This will take about 2 minutes. If the mixture becomes too thick, you can add a bit of water until you have your desired consistency.
  2. Separate the mixture into 4 smoothie glasses or mason jars. Place some chia seeds on top and top with fresh mint for garnish. Serve and Enjoy!
