We love cupcakes.Cupcakes are more fun to eat, more fun to make and are just more fun, period. So what better way to celebrate the fact that Summer is almost here than with summer cupcakes.

Summer Cupcake Flavors

For me, summer cupcakes are not about the flavor. It is about the way the cupcake looks. Anything can be a summer cupcake flavor. If I were to choose a summer cupcake flavor, I would lean towards pina colada, anything fruit flavored, and s’mores cupcakes.

Summer Cupcake Ideas

Even when I used to work in the bakery, I always preferred decorating cupcakes rather than cakes. Cupcakes are easier to decorate than cakes. With cupcakes, each person gets their own completed picture. While there are lots of fun ways to create a summer themed cupcake, most of them require some sort of decorating skills. This summer cupcake idea is so simple, the kids could do it.

Summer themed Cupcakes

These summer themed cupcakes are so good and so simple to make.

Ingredients for these Summer Cupcakes

1 box of cake mix (we used white but you could use pineapple upside cake for a more summer cupcake!)
2 Eggs
2/3 Cup of Water
1/3 Cup of Vegetable Oil
Funfetti Aqua Blue Icing
Wilton Flamingo Sprinkles
Wilton Pineapple Sprinkles

Directions
 
Mix cake mix, water, vegetable oil and eggs according to the cake mix box.

Spray cupcake pan with cooking spray if you choose not to use cupcake liners. Otherwise, put down cupcake liners first.
Pour cupcake mix into a measuring cup for easy pouring. Pour the cupcake mix into the cupcake pan, making sure not to fill all the way to the top.
Bake for 15 minutes at 350 degrees.
Let cupcakes cool.

Transfer your aqua blue icing to a ziploc bag or a Wilton icing bag. I used a Wilton Tip 1M to pipe on the frosting on top of the cupcake.
Frost each cupcake with the icing. On the top of the cupcake, sprinkle the flamingo and pineapple sprinkles on top of the cupcake.

  3. Pour cupcake mix into a measuring cup for easy pouring. Pour the cupcake mix into the cupcake pan, making sure not to fill all the way to the top.
  4. Bake for 15 minutes at 350 degrees.
  5. Let cupcakes cool.
  6. While the cupcakes are cooling, cut your green twizzlers in half for the pineapple's stem.
  7. Transfer your aqua blue icing to a ziploc bag or a Wilton icing bag. I used a Wilton Tip 1M to pipe on the frosting on top of the cupcake.
  8. Frost each cupcake with the icing. On the top of the cupcake, sprinkle the flamingo and pineapple sprinkles on top of the cupcake.
  9. Enjoy!
